Prawn & Chorizo Pasta
Ingredients
- 1 tablespoon olive oil
- 1 ring chorizo, sliced
- 1 teaspoon rosemary
- 2 cloves garlic
- 1 tablespoon tomato puree
- 5 tablespoons red wine
- 1 large jar passata
- 1 courgette
- 1 teaspoon sugar
- Prawns
Method
- Heat the oil
- Chop chorizo, garlic
- Grate courgette
- Fry the chorizo over medium heat
- Add the rosemary and garlic
- Cook for a few minutes
- Turn up the heat, add the tomato puree and cook for 1 minute
- Add the wine and cook until the wine disappears
- Add passata, courgette and sugar
- Turn down heat and simmer for 15 minutes
- Add prawns and cook for 3-5 minutes
