Pancakes with Maple Syrup & Banana
Ingredients
- 1 cup of plain flour
- 2 tablespoons of sugar
- 1 tablespoon of baking powder
- 1 tablespoon of salt (optional)
- 1 cup of milk
- 1 egg (beaten)
- Butter
- 1 banana
- Maple syrup
Method
- Take a large bowl (or a large jug) and add the flour, 2 tablespoons of sugar and 1 tablespoon of baking powder.
- If you are using salt, add it too. I don’t bother with it!
- Mix gently with a fork or whisk.
- Make a well in the center.
- Pour a cup of milk into the well.
- Add the beaten egg.
- Mix gently until the batter forms – try not to over mix.
- Add a small knob of butter to a non stick pan and place over a medium heat.
- When the pan is hot, pour the batter onto the pan to the size you’d like your pancakes. I generally make 3/4 small pancakes at a time so they don’t flow into each other on the pan. Smaller pancakes are easier to flip too.
- Flip the pancakes after a minute or so when you see bubbles on top and/or the edges of the pancakes go brown.
- Cook for another minute or so.
- Slice a banana.
- When the pancakes are done, place them on a plate, add some slices of banana and lightly pour maple syrup over everything. The natural sweetness from the banana reduces the need for ‘lots’ of syrup.
